Brown Rice Crispy Treats with Almond Butter
Adapted slightly from Oh She Glows
1/2 cup creamy almond butter
1/2 cup brown rice syrup
1 tbsp vanilla extract
1 tbsp coconut oil
pinch kosher salt
3 1/2 cups Brown Rice Crisps cereal
1/4 cup chocolate chips (+ optional more to drizzle)
Toasted coconut flakes (optional topping)
Line a 8x8 square pan with parchment. In a medium saucepan over medium heat, add first 5 ingredients and stir well until combined. Add brown rice crisp cereal all at once (sprinkle in chocolate chips if desired) and stir quickly with a spatula to combine. Scoop into prepared pan and press down evenly. (Use a silicone spatula with a little bit of water to help reduce stickiness.) Optional step: drizzle a little more melted chocolate chips across the top and sprinkle with toasted coconut flakes. Set in the fridge or freezer at least 15 minutes. Slice into squares and serve.
