Banana Bread




Banana Bread Muffins (or one large Banana Bread Loaf)
Adapted from Simply Recipes

3 very ripe bananas, mashed (about 1 1/4 cups)
1/3 cup melted butter
1 tsp baking soda
Pinch of salt
1/2 cup brown sugar (increase to 3/4 cup or up to 1cup if you prefer more sweet)
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 1/2 cups of all-purpose flour
Optional toppings: banana slices, walnuts, chocolate chips

Equipment: 12 cupcake pan or a 9x5" loaf pan



    1. Preheat oven to 350°F. Grease a 9x5" loaf pan with butter and dust with flour, tapping out any excess.  
    2. Combine mashed banana, butter, baking soda, salt, and sugar and vanilla in a medium bowl. Sift in flour and stir until fully incorporated.  Transfer to prepared pan.  Top with walnuts, banana slices, chocolate chips if desired.
    3. Bake muffins for 20 min, or a full sized loaf for 55 min.
