Pão de Queijo - Brazilian cheese bread
Adapted via Simply Recipes

1 1/2 cups (170g) tapioca flour
1 large egg
1/3 cup extra virgin olive oil
2/3 cup milk
1/2 cup grated cheese (I mixed pepperjack and cheddar)
1 teaspoon kosher salt 
Special equipment:  One 24-well mini cupcake tin.

Preheat oven to 400°F. Grease mini cupcake tin.

Put all of the ingredients into a blender and pulse until smooth. Pour into mini-cupcake tin, not quite full - leave about 1/8 inch from the top.  Add additional cheese topping if desired. (This will give the bread some color variation as shown.)

Bake for 20 minutes, until puffed and slightly crisp crust. Remove from oven and let cool on a rack before serving.
